The Art of the Ethiopian Coffee Ceremony

Discover the ancient ritual of the Ethiopian coffee ceremony — a symbol of friendship, respect, and community. From roasting the beans over charcoal to the three ceremonial rounds, experience the magic of Buna.

The Ethiopian coffee ceremony, known as Buna in Amharic, is far more than just a way to prepare coffee — it is a sacred ritual that embodies the spirit of Ethiopian hospitality. Rooted in centuries of tradition, the ceremony is a symbol of friendship, respect, and community.

Coffee roasting

The ceremony begins with the roasting of green coffee beans over a charcoal fire. The beans are stirred constantly until they crackle and release their rich, aromatic oils, filling the air with an irresistible fragrance. This is followed by washing and cleaning the beans to ensure the purest flavor.

The Three Rounds: Abol (the first, strongest round), Tona (the second), and Baraka (the third, signifying blessing). Each round is served with traditional snacks like popcorn or roasted barley.

Using a traditional mortar and pestle, the roasted beans are ground into a fine powder — a rhythmic pounding that is a familiar and comforting sound. The ground coffee is then placed into a clay pot called a Jebena with water and brought to a gentle boil.

The coffee is poured from a height into small cups, creating a delicate foam. It is served in three rounds, each with a different significance. The ceremony is accompanied by the burning of frankincense incense, adding a spiritual dimension to the experience.

At Kana Restaurant, we invite you to witness and partake in this age-old tradition, prepared with the utmost care and authenticity. It is an experience that connects you to the heart of Ethiopian culture.

Why Ethiopia Is the Birthplace of Coffee

Ethiopia is the cradle of coffee. Discover the legend of Kaldi and his dancing goats, and learn how Ethiopian coffee culture has shaped the world's favorite beverage for centuries.

Legend has it that coffee was discovered in Ethiopia by a goat herder named Kaldi in the 9th century. Kaldi noticed his goats dancing energetically after eating berries from a certain tree. Curious, he tried the berries himself and experienced a newfound vitality.

Coffee landscape

Kaldi shared his discovery with a local monk, who made a drink from the berries and found that it helped him stay awake during evening prayers. The news spread, and coffee began its journey from the forests of Ethiopia to the rest of the world.

Did You Know? Ethiopia is the only country where coffee grows wild in its natural habitat. The country is home to thousands of indigenous coffee varieties.

Today, coffee is deeply woven into the fabric of Ethiopian culture. The coffee ceremony is a daily ritual in most Ethiopian homes, and the country remains one of the world's top coffee producers.

At Kana Restaurant, we honor this heritage by serving coffee that is freshly roasted and prepared using traditional methods. Every cup tells the story of Ethiopia's rich coffee legacy.

What Makes Injera So Special?

Injera is more than just bread — it's the heart of Ethiopian dining. Discover the ancient process of fermenting teff flour and how this spongy flatbread has become a cultural icon.

Injera is the soul of Ethiopian cuisine. This spongy, sourdough flatbread serves as both plate and utensil, and its preparation is a true art form.

Injera making

Injera is made from teff, an ancient grain native to Ethiopia. Teff is gluten-free and packed with nutrients. The grain is ground into flour, mixed with water, and fermented for several days. This fermentation process gives injera its characteristic tangy flavor and bubbly texture.

Fun Fact: Teff is one of the smallest grains in the world, but it's rich in calcium, iron, and protein.

The batter is then poured onto a large, flat griddle called a mitad. As it cooks, tiny bubbles form on the surface, creating the iconic spongy texture. The result is a flatbread that is both soft and slightly tangy, with a unique porous surface that perfectly absorbs stews and sauces.

At Kana Restaurant, our injera is made fresh daily using traditional methods. It is the perfect companion to our authentic Ethiopian dishes.
